I am a coach for the RESTART program, a 5-week class that is part nutrition education, part support group for a built-in 3-week sugar detox diet. I love leading this class. It is so exciting to see how empowered people feel to be in control of the way they feel again once they are free from the power of sugar addiction and armed with the knowledge of what sugar REALLY does to us.
This is an excellent recipe for the RESTART program because ½ cup of berries per day is permitted and feels like such a treat after removing added sweeteners for several days.
I developed this recipe for a friend who was doing a sugar detox over the weekend of my husband’s 30th birthday party.
I had made TWO of my husband’s favorite desserts for the party: carrot cake and berry crisp, both of which were delicious if I do say so myself – I recommend checking out the recipes here and here. However, I wanted my friend to be able to enjoy herself at the party even though she couldn’t eat the same dessert.
So I threw this dessert together as we were serving the cake and it turned out to be surprisingly delicious!
The trick is to use really fresh berries- we simply cannot improve upon God’s best natural work :)
If you tolerate dairy well, substituting dairy cream would also work. Do you have any other ideas of substitutions that would work well? Let me know in the comments!
Prep Time: 5 minutes
¼ cup full-fat coconut milk (I recommend Natural Value)
½ cup fresh blueberries or raspberries
A few fresh mint leaves
- Spoon the coconut milk into an individual serving bowl
- Add the berries to the bowl
- Chop the mint leaves finely and add to the bowl
- Squeeze the lime juice over the berry mix
- Sit down, breathe deeply, and enjoy with friends or family
